This recipe really doesn't have measurements so you can adjust it however you like.
For 5 dumplings:
8-10 apples peeled,cored, and cut into 1- 1 1/2 inch chunks. I use Winesap apples but you can use the type you like. Butter Cinnamon Sugar Milk
For the crust I use Jiffy or Betty Crocker or homemade, whatever suits you. Generally two pie crusts make four dumplings and the packages contain enough for two pie crusts. I just use the leftover to make poor man's pie or cinnamon roll ups if I have it.
Make and roll out crust ( cut the one crust in two equals parts). Place prepared apples in center of dough, sprinkle with about a tsp. of sugar over apples, sprinkle with cinnamon. Place a small pat of butter on top of apples and add a splash of milk. Now take the crust and close up the dumplings. You can use water on edges if it is not sticking together.
Place in preheated 375* oven until apple are tender and crust is brown. Generally 45 minutes maybe less depending on size of apple chunks.
Cream Sauce:
I never measure so make sure to taste your sauce to suit your taste for desired sweetness.
I use about 2-3 cups of milk, about two tsps. of vanilla extract, and about 1/4 cup of sugar to start. If I want it sweeter, after it has simmered for a bit I taste it and add more. After it is the way you want it, add cornstarch. About 4 tbs. with some water. Pour in slowly and simmer until it becomes thick. Add more to desired thickness, I like mine to leave a finger mark on the back of a wooden spoon.
Pour over dumplings while the sauce is warm. Sauce can be refrigerated and reheated.

This sounds wonderful, Aero. Do you roll each crust into a circle or a rectangle? I'll bet it's good with that sauce. Can you freeze them? (before or after they are baked?)
We don't generally get winesaps in our stores...Granny Smiths would be good, I'll bet.

Merry,
I would say that any apple that you prefer you could use. Even mix them I think would be fantastic. I have never frozen these, they don't last. I usually eat as a breakfast/lunch when around and snack.
I try to roll out to a circle but it is kinda rustic so I just roll it until I get it to at least two dumplings per pie crust. I am sure you could even make smaller ones if you wanted.

these sound so good~~especially that sauce!! thanks and will let you know how they come out.
Merry, I generally use Granny Smiths~~their flavor is so good and they hold up well when baking~~Honey crisps are a fav also but also kinda expensive~~

Honeycrisps are my favorite eating apple--but, like you said, Colleen, they are the most expensive ones around here. I've never tried cooking with them. You can't beat a Granny Smith for cooking (IMHO )
