Potato Pie
Mix together: 2 cups mashed potatoes (either left-overs or make a pouch of Idahoan Loaded Baked Mashed Potatoes) 2 eggs 1/2 cup thinly sliced green onions 1/4 cup panko bread crumbs 1/2 cup shredded cheddar cheese Salt and pepper
In a medium saute pan, heat 1 Tbl oil over medium heat. Sprinkle with 1/2 cup bread crumbs. Gently spread with potato mixture. Top with 1/2 cup shredded cheese.
Continue cooking over medium heat for 15-20 minutes until set and bubbling in the center. (I found this burned the bread crumbs and next time I will put it in the oven at 350* for 15-20 minutes).
Remove from heat and let set 5 minutes, and then invert onto a plate to serve.

or maybe just lower the heat, but I think it would do better in the oven, sounds so good!!!

I googled potato pie. Wow, there are a lot of recipes out there.
Do you mix the eggs right in with the mashed potato's?
What about gravy? I love gravy on potato's.
This sounds nice and easy. Easy is one of my favourite things. lol

Yep - Cheryl - just beat the eggs and then stir into the potatoes. I love gravy too, but it really isn't necessary with this...and probably wouldn't be a good combination. This is pretty much a stand-alone sort of thing.
