1 1/2 # sweet Ital. sausage 2 cloves minced garlic 2 sm. chopped onions 32 oz. whole peeled tomatoes, cut or crushed into smaller pieces 6 c. beef broth (subst. 1 c. red wine if you like) 1/2 tsp. dried basil 1/2 tsp. dried oregano 2 sliced zucchini 1 c. chopped green pepper ( I only use 1/4 c. as it is too much for me) 3 tbs. chopped fresh parsley 16 oz. spinach fettuccine broke into pieces pepper and salt to taste. Cheese for grating
Cook sausage until brown and remove from pan. Reserve 3 tbls. of grease for cooking onion and garlic. Cook onion and garlic until onions are translucent.
Cut tomatoes and place in crockpot, add sausage, garlic, onions, basil, oregano, zucchini, green pepper,salt, pepper, parsley, and beef broth.
Cook on high for 4 hours. Cook pasta place a serving in a bowl and add soup to the top.
I like to top with freshly grated Romano cheese.
Alternative: After browning sausage, add all ingredients to dutch oven and cook until zucchini is tender.

This sounds good. I imagine you can substitute ground beef for the sausage if you like. Maybe if you used yellow or red pepper, you'd like it better.

Merry, yes I thought of the red bell pepper substitute also. But probably would go very cautiously on that as well. They don't like me, lol.
I think this would also be great with Chicken or Turkey sausage, but my family would not go for anything that isn't "real" meat as they say, lol.
