I fixed this yesterday, and it was wonderful!!
Vegetable Soup Serves 4
2 links of Hot (or mild) Italian Sausage [or 1/2 pound bulk sausage] 1/2 medium yellow onion, diced 2 large carrots, sliced thin 1 celery stalk with leaves, sliced thin 1 can beef broth 2 cans (12 oz.) V-8 (I used the Spicy Hot variety) 1 can cannellini beans
Squeeze the sausage out of the casing, break apart and brown over medium heat. Add the sliced vegetables. Cook and stir until the vegies are sweated out (about 4-5 minutes). Add the can of broth and bring to a simmer. Simmer until vegetables are done, scraping any stuck bits from the bottom of the pot. Add both cans of V-8. Drain and rinse the cannellini beans. Add to the soup, and warm through. Enjoy!
Variations: Omit the sausage and add some diced potatoes and/or turnips for a vegetarian soup.
Add a handful of rice or barley to make the soup even heartier.
Substitute parsnips for the carrot to give it a little more "attitude."
Add a bunch of kale to the soup if you need some extra iron... or if you just like greens.

That sounds good! I use V-8 in bean soup too. Say instead of squeezing the meat out of the casing just slice the casing length-wise and then peel it off.

sounds good except for the beans...i hate beans ...lol I make something very similar and its so good!!!

I am not a fan of beans either. But the soup sounds delish. I would probably do elbow in it as that is what the family likes.
