I made a soup today, could pass as a stew, it has pasta in it but you could leave it out, I never used to put it in until recently. I start out by sauteing a roll of Jimmy Dean sausage, a Valida onion, 2 cloves of garlic until the sausage is cooked. Then I add about 8 cups chicken stock, the kind in the box, a can of fire roasted tomatoes, about 2 cups of cut up carrots and let that cook until the carrots are tender. Then I add a a bag of baby spinach and let it wilt and then add about 2 cups, a little less really of a small pasta but not real small. Today I used the small bow ties by Barilla, small shells work nice too. Pastina & that type are too small. Cook till tender & add some Parmesan cheese. If you like it spicy you can use the spicy sausage or throw in some red pepper or use rotel. Its really good. I guess I could have posted this in the recipe section....

That stew/soup sounds awesome. I would use the sausage the first time for the family. But, maybe chicken would work too?

Colleen - why don't you copy that recipe over so we'll be able to find it easily? It sounds delish! Especially the baby spinach. How about a box of frozen chopped spinach? I love soups/stews or, as Rachael Ray says, "Stoup" - only problem is the weather here. It's in the upper 80s already, which makes it not very soup-friendly.
I'm planning spaghetti and meatballs tonight.

That soup does sound good, Colleen.
We had pork tenderloin last night, with scalloped potato's, corn for the fella's (I don't eat corn, except in the summer I'll cheat and have corn on the cob) and Sidekick's noodles.
Tonight I'll make pork chops. We went to Costco and bought some more meat.

Last nite was leftover nite. I had soup and salad.
Tonite was meatballs and whole grain Barilla pasta. I used the Francesco Rinaldi for a quick sauce because I didn't have time to defrost mine.
What a boring dinner, lol

Merry, I am not sure of the company that makes the Franceso Rinaldi, but it is always on sale... I like it as a quick fix...even better than Prego or Ragu.
I had scrapple, poached eggs tonite.

Since I'm late getting home today and didn't take anything out, I think I'll just make spaghetti. That's always good and easy.

I found some new stuff by Kraft that is a mix of cheese, spices and bread crumbs. It's in the dairy aisle. You coat your meat with it and then bake. Really delicious!! I tried it on chicken cutlets - only used half the package - and then used it the next night on sliced pork tenderloin. It was wonderful. Really quick, too. You can also use it on fish. The chicken cutlets and tenderloin both cook in about 15 minutes in the toaster oven...can't beat that for quick and easy. Here's the link: www.kraftrecipes.com/kraftcheese/freshtake.aspx

I'mgoing to make chicken with rice tonight. I love the one dish meals. Of course, I forgot to take the chicken out this morning, so will have to head down to the freezer soon.

Merry, I have seen that Kraft mix on commercials. It looks good too, but haven't found it in the grocery store yet.
I am having a Perdue Ready Roast Turkey today. I have my chicken defrosting for chicken noodle tomorrow.
